Great Pumpkin Cookies

I was looking for yummy holiday cookie recipes and was excited to find these Great Pumpkin Cookies. I made them for the kids when we got back from pumpkin picking, they'll be wonderful for Thanksgiving.

Notes

Variation: Substitute 1 cup of raisins for chocolate chips.

Ingredients

  • 4 cup flour
  • 2 cup quick uncooked oats
  • 2 teaspoon baking soda
  • 2 teaspoon ground cinnamon
  • 1 teaspoon salt
  • 1 1/2 cup butter, softened
  • 2 cup brown sugar
  • 1 cup sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 can (16-ounce) solid pack pumpkin
  • 1 cup semi-sweet chocolate morsels

Instructions

  1. Preheat oven to 350 degrees F.
     
  2. Combine flour, oats, soda, cinnamon and salt; set aside.
     
  3. Cream butter; gradually add sugars, beating until light and fluffy.
     
  4. Add egg and vanilla; mix well. Alternate additions of dry ingredients and pumpkin, mixing well after each addition.
     
  5. Stir in morsels. Bake at 350 degrees F for 20-25 minutes, until cookies are firm and lightly browned.
     
  6. Remove from cookie sheets; cool on racks. Dough may be frozen in air-tight container.
     
  7. Thaw in refrigerator; bake as directed. Decorate using icing or peanut butter to affix assorted candies, raisins and nuts.
