Chocolate Pillows

Ingredients

  • 2 1/2 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened slightly
  • 3/4 cup granulated sugar
  • 1 large egg
  • 2 teaspoon pure vanilla extract
  • 6 chocolate bars, broken into rectangular pieces along the marks on the bar.

Instructions

  • Preheat oven to 375 degrees F. Have ready one ungreased cookie sheet.
     
  • Sift flour and salt together into a bowl and set aside.
     
  • With an electric mixer, beat butter with sugar until it is light and fluffy, then add egg and vanilla and mix until well combined. Stir in flour and salt to form a stiff dough. 
     
  • Insert dough into the tube of a cookie press fitted with a dye with one-inch-wide, saw tooth opening. Pipe 3 strips of dough down the length of the baking sheet about 2” apart.
     
  • Place a row of the chocolate pieces along the length, then pipe a second layer of dough on top of the candy. Repeat on second cookie sheet until all of the dough is used.
     
  • Bake for about 15 minutes until dough is set and edges just begin to brown. Immediately when cookies come out of the oven, gently cut into individual cookies and then remove very carefully to a wire rack to cool. Sprinkle with sifted powdered sugar before serving.
