Apple Sandwich Cookies

Here's a great cookie recipe that combines the flavors of the holiday season with brown sugar and golden syrup. Apple sandwich cookies are perfect for Christmas and will make for a wonderful dessert dish.

Notes

Date or fig filling may also be used if desired. For date filling: 1/3 cup Roger's Golden syrup 1/2 poud chopped dates or figs 1/3 cup boiling water 1 tablespoon lemon juice.

Ingredients

  • 1 cup shortening
  • 1/2 cup brown Sugar
  • 1/2 cup Roger's Golden syrup
  • 2 eggs beaten
  • 3 cup all-purpose flour
  • 1/2 teaspoon salt
  • 2 1/4 teaspoon baking powder
  • 3 apples
  • 1 cup Roger's golden syrup
  • 1 lemon, juiced and grated for rind

Instructions

  1. Cream shortening, add sugar and syrup gradually. Beat until light and fluffy. Add well beaten eggs and blend thoroughly.
     
  2. Fold in flour with salt and baking powder.
     
  3. Chill dough well. Roll thin on slightly floured board and cut in 3 inch rounds.
     
  4. Bake on lightly greased baking sheet 10 to 12 minutes at 350 degrees F or until nicely browned. While still warm put together in pairs with filling.
     
  5. Filling: Combine ingredients and bring to a boil and simmer gently for 10 minutes.
     
  6. Cool and spread between cookies.
