Yugoslav Kifle

Kifle is popular throughout Eastern Europe and the countries of the former Yugoslavia. This recipe makes a sugary filled pastry, but the dish is also often left unsweetened and served as a savory sandwich roll.

Ingredients

  • 2 cup sifted flour
  • 1 cup cake yeast
  • 1/2 cup margarine
  • 2 egg yolks
  • 1/2 cup dairy sour cream

Instructions

  1. Sift flour into mixing bowl.
     
  2. Crumble in yeast.
     
  3. Cut in margarine until mixture is crumbly.
     
  4. Add egg yolks and sour cream. Mix well.
     
  5. Form into a ball and knead till smooth.
     
  6. Divide into three parts. Chill 1 hour.
     
  7. Preheat oven to 375F degrees.
     
  8. On board sprinkled with confectioner's sugar, roll ball into 8 inch circle.
     
  9. Cut circle into 8 wedges.
     
  10. Fill wide end of each with 1 tablespoon filling (recipe below).
     
  11. Roll up from wide end.
     
  12. Place on a greased baking sheet and form into a crescent.
     
  13. Bake at 375 degrees F for about 25 minutes.
     
  14. Dust with confectioners sugar.

 

Filling:

  • 1 cup finely chopped nuts
     
  • 1/2 cup sugar
     
  • 1 teaspoon vanilla
     
  • 2 egg whites
  1. Combine the nuts, sugar and vanilla.
     
  2. Beat two egg whites till stiff.
     
  3. Fold in nut mixture. You could add chopped apricots or apricot jam to the filling mixture, if you wish.
