Peanut Butter 'n Carrot Cookies

Ingredients

  • 1/2 cup peanut butter
  • 1/4 cup shortening
  • 1/2 cup packed brown sugar
  • 1/4 cup granulated sugar
  • 1 egg
  • 1 teaspoon vanilla
  • 1 cup all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup 100% bran cereal
  • 1 cup shredded carrots
  • 1/2 cup chopped peanuts or sunflower seeds

Instructions

Yield: 3 dozen.

  1. Cream peanut butter, shortening, sugars, egg and vanilla until light and fluffy.
     
  2. Mix flour, baking soda and salt; blend into creamed mixture.
     
  3. Stir in cereal, carrots and peanuts.
     
  4. Form into 1-inch balls; place on baking sheet, about 2 inches apart. Flatten with fork.
     
  5. Bake at 350 degrees F (180C) for 10 to 12 minutes or until lightly browned. Cool on racks. Store in airtight container.
