No Yolk Amaretti

Ingredients

  • 1/2 pound or 1 cup almond paste
  • 1 cup confectioner's sugar
  • 3-4 egg whites
  • 1/2 cup fine granulated or colored sugar

Instructions

Preheat oven to 250 F. Work almond paste and confectioner's sugar until mixed well. Add egg white one at a time mixing thoroughly after each. It may not be necessary to add the last egg white. Consistency should be soft enough to go through a pastry bag and hold it's shape. Line baking sheet with wax paper and press out rounds of dough the size of a quarter. Lacking a bag, use a teaspoon. Sprinkle with sugar and bake on the top shelf in the preheated oven for 15-20 min. Remove from paper immediately and place on rack to cool.
