Low fat Oatmeal Cookies

Ingredients

  • 1 1/2 cup all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 6 tablespoon unsalted margarine, softened
  • 1/2 cup unsweetened applesauce
  • 1/3 cup honey
  • 1 large egg, slightly beaten
  • 1 cup old fashioned rolled oats

Instructions

1. Preheat oven to 375 degrees F. In small bowl, combine flour, cinnamon, baking powder and salt.

2. In a large mixing bowl, beat margarine with mixer (or by hand) until creamy.

3. Add in applesauce, honey and egg. Gradually add in flour mixture until dough forms. Stir in oats.

4. Drop dough by spoonfuls on greased cookie sheets. Bake 10-12 minutes, until lightly golden.

5. Add pecans, almonds, walnuts, or raisins, as you prefer. Or use very chunky applesauce. Variation: Add bits of crystallized ginger.
