Ladyfingers

Ingredients

  • 3 eggs, separated
  • 2/3c powdered sugar
  • 1/2c sifted cake flour
  • 1/8 tsp salt
  • 1/2 tsp vanilla

Instructions

Mix flour, salt and 1/3 c sugar and sift together three times. Beat egg whites until stiff and gradually beat in remaining sugar. Fold in vanilla and egg yolks, beaten until thick and very light colored. Carefully fold in the flour, sugar mixture, sprinkling about 3T at a time over surface. Press through pastry tube on ungreased paper-lined pans, making strips 4 x 3/4" or bake in lady finger pans. Dust with additional powdered sugar and bake in a moderate oven (350F) for 10 to 12 minutes. Batter may be dropped from tsp to make rounds if desired. Yields 24 ladyfingers
