"A simple, soft, and chewy homemade granola bar recipe that’s perfectly delicious and a perfect afternoon snack idea. These honey granola bars are so easy and wholesome. They are naturally sweetened and a gluten-free snack. There are several substitutes for nuts in this recipe. You can use a mix of nuts such as pecans, walnuts, almonds, or peanuts would all work well. Sunflower seeds and pumpkin seeds would be great options too. You could also add up to 1/4 cup flax seeds if you wish."

NotesDried fruits such as cranberries, cherries, raisins, and apricots are perfect to add as a mix-in. Chop any fruit larger than a raisin. Finally, you can substitute honey for maple syrup.

Ingredients

  • 2 cup old-fashioned oats
  • 1 teaspoon ground cinnamon
  • 1 teaspoon fine sea salt
  • 2 cup nuts
  • 1 cup creamy peanut butter
  • 1 cup honey
  • 1 teaspoon vanilla extract

Instructions

  1. Line a 9-inch square baker with two strips of crisscrossed parchment paper.

  2. Place the oats in a large mixing bowl.

  3. Add the cinnamon, salt, and stir to combine. Set aside.

  4. Chop the nuts and add them to the oats mixture.

  5. Add peanut butter, honey, and vanilla extract in another bowl.

  6. Stir until well blended.

  7. Pour the liquid ingredients into the dry ingredients.

  8. Use a big spoon to mix them until the two are evenly combined and no dry oats remain.

  9. Transfer the mixture to the prepared square baking sheet.

  10. Use your spoon to arrange the mixture fairly and evenly.

  11. Cover the baker and refrigerate for at least one hour, or preferably overnight.

  12. When you’re ready to slice, lift the bars out of the baker by grabbing both pieces of parchment paper on opposite corners.

  13. Use a sharp knife to slice the bars.

  14. Wrap individual bars in plastic wrap or parchment paper
