Danish Klejner

Ingredients

  • 4 eggs
  • 1 cup sugar
  • 1/2 cup margarine or shortening, melted
  • 2 Tbsp. cream or milk
  • 4 cup. flour
  • 1/4 teaspoon baking soda
  • 12 to 15 cardamom seeds, grated (about 3 to 4 tsp. after grating)
  • Grated rind of 1/2 lemon
  • Salt

Instructions

Beat eggs well. Add sugar and beat well. Add 2 cups of flour and mix. Add the margarine or shortening and the second 2 c. of flour. Mix in remaining ingredients. Chill dough several hours. Roll out to 1/4" thick on floured board. Cut in rectangles 1-1/2- x 3-inches and then cut a l-inch slit in center the long way. Pull one end through the slit. Fry in deep fat like doughnuts.
