Banana Jumbos

Bananas and chocolate make a great combo. You can't go wrong with cookies that take these flavors and turn them into a delicious dessert. Banana Jumbos are the perfect fruity cookie for Christmas or any time.

Notes

If desired frost with a thin confectioners sugar icing - Thin Icing 1 cup confectioners sugar 1 to 2 tablespoons milk, water or cream 1/2 teaspoon vanilla.

Ingredients

  • 1 cup shortening (part butter or margarine)
  • 1 cup sugar
  • 2 eggs
  • 1 cup ripe bananas, mashed
  • 1/2 cup buttermilk
  • 1 vanilla
  • 3 cup flour
  • 1/2 tablespoon baking soda
  • 1/2 salt
  • 1 cup nuts or chocolate chips, chopped

Instructions

  1. Mix shortening, sugar, and eggs thoroughly. Stir in bananas, butter, milk and vanilla.
     
  2. Measure flour by dipping method, or by sifting. Stir flour, soda and salt together.
     
  3. Add wet to dry ingredients, stir in chips. Chill one hour.
     
  4. Heat oven to 375 degrees F.
     
  5. Drop rounded Tablespoonfuls of dough two inches apart on lightly greased baking sheet.
     
  6. Bake about 10 minutes or until delicately browned.
