Applesauce Oatmeal Cookies

With half the butter of normal cookies, Applesauce Oatmeal Cookies are the perfect alternative to oatmeal cookie recipes. They taste just like your favorite cookie recipes, but they have a delicious apple kick!

Ingredients

  • 1 3/4 cup quick-cooking oats
  • 1 1/2 cup flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1 cup packed light brown sugar
  • 1/2 cup sugar
  • 1/2 cup butter softened
  • 1 large egg
  • 3/4 cup applesauce
  • 1 cup semisweet chocolate chips
  • 1 cup raisins
  • 1 cup chopped walnuts

Instructions

  1. Preheat oven to 375 degrees F.
     
  2. In a medium-sized bowl, combine oats, flour, baking powder, baking soda, salt, cinnamon and nutmeg. Mix well and set aside.
     
  3. In a large bowl, combine sugars with an electric mixer on med. speed.
     
  4. Add butter and beat to form a grainy paste.
     
  5. Add egg and applesauce, and blend until smooth.
     
  6. Add flour mixture, chocolate chips, raisins and walnuts. Blend at low speed just until combined.
     
  7. Drop dough by tablespoons onto lightly greased cookie sheets, 2 inches apart.
     
  8. Bake for 12-14 minutes or until light brown. Immediately transfer to a cool, flat surface.
