"These Amish No Bake Cookies are a rich combination of chocolate, peanut butter, and oats — and there’s no need to turn on your oven! It’s a recipe that’s near and dear to our hearts, and a family-favorite dessert that we have enjoyed for years. The recipe originally came from our former babysitter, Rebekah, who helped raise each of my boys from the time that they were infants. Rebekah’s family lives on the dairy farm just up the road from our house, so she started taking care of the kids when she was a teenager and could ride her bike to our house! I was still working full time back then, so Rebekah came to the house on a daily basis and quickly became an integral part of our family. Back in 2014, when Casey was turning three, Rebekah and her sister Catherine invited the kids to their farm to spend a morning watching their brother milk the cows, meeting the chickens, harvesting sugar snap peas, and picking mulberries. The boys obviously loved every minute of it, but the true highlight was when the girls brought out Casey’s birthday treat: a plate full of these chocolate peanut butter no bake cookies. Oh my goodness…you’ve never seen such happy children! That first batch disappeared within a matter of days, so of course I begged Rebekah to share the easy recipe with me right away. We’ve been enjoying these no bake cookies ever since! They’re made with simple pantry staples, so I can always pull them together at the last minute. Plus, in just 10 minutes they set up and become nice and firm — like a cross between a chewy oatmeal cookie and a rich piece of fudge! Best of all, the treats bring back so many fond memories, taking us far beyond the sweet taste of a simple cookie."
