Amaretti With Cocoa

For a fun and incredibly delicious change to traditional amaretti cookies, bake this version with cocoa. They're so good, they just melt in your mouth...and you can't eat just one!

Ingredients

  • 4 eggs
  • 2 cup sugar
  • 1 small bottle almond extract
  • 3 tablespoon cocoa powder
  • 6 cup ground almonds
  • 1/2 cup confectioner's sugar
  • water

Instructions

COOKIES

  1. Preheat oven to 350F degrees.
     
  2. Beat eggs, add sugar and almond extract.
     
  3. Mix  cocoa and almonds; combine with egg mixture.
     
  4. Drop by spoonfuls on a cookie sheet lined with parchment.
     
  5. Bake at 350F degrees for 8-10 minutes.

 

GLAZE

  1. Stir water into confectioner's sugar, a teaspoon at a time, to make a thin glaze.
     
  2. Roll warm cookies in glaze and allow to cool to set.
