Sweet Potato Fries

Ingredients

  • 9 sweet potatoes, peeled and sliced
  • 1/2 cup agave
  • 3 tablespoon fresh ginger, grated
  • 2 tablespoon coconut oil
  • 1 teaspoon ground cardamon
  • 1/2 teaspoon ground black pepper

Instructions

  1. Preheat oven to 400 degrees F.
     
  2. In a large bowl, combine the sweet potatoes, agave, ginger, oil, cardamom and pepper.
     
  3. Transfer to a large cast iron frying pan. Bake for 20 minutes.
     
  4. Turn the mixture over to expose the pieces from the bottom of the pan. Bake for another 20 minutes, or until the sweet potatoes are tender and caramelized on the outside.
