Spekulatius (Christmas Spice Cookie)
A German Christmas treat, make these easy and delicious Spekulatius (Christmas Spice Cookie) as a gift or for a holiday party. With so many Christmas cookie recipes out there, bring some new traditions to your home.
Ingredients
- 125 gram butter
- 150 gram sugar
- 1 egg
- 1 teaspoon cinnamon
- 50 gram ground haselnut
- lemon zest to taste
- 275 gram flour
- 1 teaspoon baking powder
Instructions
- Beat butter until light and creamy.
- Blend in sugar, cinnamon, egg, hazelnuts, zest, flour and baking powder.
- Mix well and roll out (very thin).
- Cut into shapes with cookie cutters (or Spekulatius form, if you find one).
- Place cookies on greased cookie sheet and bake at moderate temperature (try 350 degrees F, maybe less) until light brown and crisp.
- These cookies should be very thin, crisp, and evenly browned.
