French Christmas Cookies

These French Christmas cookies are one of the yummiest, easy kids Christmas cookies recipes I've seen in a long time. They are cute and tasty and fun to make. Bake them with your kids today!

Ingredients

  • 40 graham cracker singles (2 packs)
  • 12 ounce mini chocolate chips
  • 2 cup finely chopped nuts (walnuts or almonds)
  • 1 cup brown sugar
  • 1 stick butter, softened to room temperature
  • 1 cup half-and-half (or 1/2 cup each milk and cream)
  • FOR FROSTING:
  • 12 ounce (1 package) chocolate chips
  • 12 ounce (1 package) butterscotch chips
  • 1 to 2 tablespoons peanut butter

Instructions

  1. Preheat oven to 375 degrees F.
     
  2. Put the grahams in your processor and process in short bursts until they are crushed similar to the texture of medium-fine chopped nuts. Pour into a bowl.
     
  3. Cream butter and sugar in processor.
     
  4. Add to crumbs and mix.  You can use a mixer on low speed.
     
  5. Add cream, nuts and chips and mix.
     
  6. Fill baking mini-cups 2/3 full.
     
  7. Bake on a cookie sheet for 10-12 minutes, just until set. Do not overbake.

 

Frosting:

  1. Melt chocolate and butterscotch chips in a saucepan over low heat (or in microwave on 50% power) with the peanut butter.
     
  2. Stir to blend well.
     
  3. Use to frost cookies.
