Chestnut Yule Log

Chestnuts and Chocolate just scream Christmas. Go ahead and make your own Chestnut Yule Log. You'll never taste anything better.

Ingredients

  • 1 pound chestnuts, peeled
  • 2 egg yolks
  • 1/4 cup granulated sugar
  • 6 ounce unsweetened chocolate
  • 1/2 cup unsalted butter
  • 2 tablespoon rum or brandy (aprox)
  • 3 ounce almond paste or marzipan
  • 2 tablespoon icing sugar
  • 2 tablespoon unsweetened cocoa powder (aprox)
  • 1 cup whipping cream
  • meringue mushrooms for garnish
  • chocolate curls

Instructions

  1. In pan, cover peeled chestnuts with cold water.
     
  2. Bring to boil and simmer until chestnuts are very soft, about 40 minutes.
     
  3. Drain, press through food mill or seive.
     
  4. In mixing bowl, beat egg yolks until light and fluffy.
     
  5. Add granulated sugar and beat until very thick.
     
  6. Melt together chocolate and butter and beat into egg yolk mixture.
  7. Beat in chestnut puree.
     
  8. Stir in rum, adding more to taste if desired.
     
  9. Chill until mixture is firm enough to shape, about 2 hours.
     
  10. Shape into log, and refrigerate for 1 hour.
     
  11. Cut ends of log on the diagonal and use short ends to simulate lopped off branches.
     
  12. Cover cut ends with thin rounds of almond paste.
     
  13. Fold icing sugar and cocoa into whipped cream, adding more cocoa if darker "bark" is desired.
     
  14. Spread cream over log and use tines of fork to simulate bark.
     
  15. Decorate with Meringue Mushrooms and chocolate curls.
     
  16. Chill until serving time.
