Ingredients

  • 6 Eggs, large
  • 1 pinch Salt
  • 1/2 cup Butter, unsalted and softened
  • 1 Container Nutella, 13 ounces
  • 1 tablespoon Rum
  • 1/2 cup Hazelnuts, finely ground
  • 4 ounce Semi-sweet chocolate, melted and cooled

Instructions

  1. Preheat oven to 350 degrees

  2. Butter a 9-inch spring form pan.

  3. In a large bowl (preferably metal), whisk the egg whites and salt until stiff.

  4. In another bowl, cream the butter and Nutella, then add the rum, egg yolks, and ground hazelnuts.

  5. Fold in melted chocolate.

  6. Add a blob of beaten egg whites to the chocolate batter, and mix gently until well-combined.

  7. Fold in the remaining whites, one-third at a time, very gently but thoroughly.

  8. Pour into spring form and bake for 40 minutes.

  9. Test for doneness by inserting tester, which should come out mostly clean; lightly pressing finger into top to check for a slight bouncing-back; and observing edges beginning to separate from pan.

  10. Let cool completely, in pan, on a rack.
