Chocolate Zucchini Cake

Ingredients

  • 1 cup firmly packed brown sugar
  • 1/2 cup sugar
  • 1/2 cup butter or marg.
  • 1/2 cup veg. oil
  • 3 eggs
  • 1 tsp vanilla
  • 1/2 cup buttermilk
  • 2 1/2 cup all-purpose flour
  • 1/2 tsp allspice
  • 1/2 tsp cinnamon
  • 1/2 tsp salt
  • 2 tsp baking soda
  • 1/4 cup cocoa
  • 1 3/4 cup shredded zucchini, drained
  • 1/2 to 1 cup semi sweet chocolate pieces

Instructions

In a large mixer bowl, cream together the sugars, butter and oil. Add eggs, vanilla and buttermilk; stir well to mix. Sift together all the dry ingredients and then shift into mixer bowl with mixture. Beat well. Drain zucchini, if necessary, and stir into cake mixture. Pour into greased 13 x 9" baking pan. Sprinkle top with chocolate pieces and bake in a preheated 325F oven for 45 minutes or until cake tests done. Makes 12 servings.
