Chocolate Zucchini Cake

Ingredients

  • 2 1/2 cup flour
  • 1/4 cup cocoa
  • 1 tsp soda
  • 1 tsp salt
  • 1/2 cup butter
  • 1/2 cup oil
  • 1 3/4 cup sugar
  • 2 eggs
  • 2 cup grated zucchini
  • 1 tsp vanilla
  • 1/2 to 3/4 cup chocolate chips
  • 1/2 to 3/4 cup chopped nuts
  • 1/2 cup buttermilk

Instructions

Sift together flour, cocoa, soda and salt; set aside. Cream butter, oil, and sugar together. Add eggs and beat well. Mix in zucchini. Add vanilla, nuts and chocolate chips. Alternately add dry ingredients and buttermilk, mixing after each addition. Pour into greased and floured 9x13-inch pan. Bake at 325 degrees F. for 50 - 60 minutes. Remove from oven when done and top with extra chocolate chips and nuts while cake is warm.
