White Knight Chili

Let this White Knight Chili rescue you from the day-to-day drama of what to have for dinner. This slow cooker chicken chili looks beautiful garnished with bright green cilantro or parsley.

Ingredients

  • 2 tablespoon olive oil
  • 2 whole boneless chicken breasts, cut into bite size pieces
  • 2 can (about 19 ounces) cannelini beans, drained
  • 2 can (about 4 ounces) chopped green chilis
  • 1 large onion, chopped
  • juice of 2 small limes
  • 1 can (about 15 ounces) diced tomatoes with the juice
  • 2 cloves garlic, crushed
  • 1 tablespoon cumin powder
  • 2 teaspoon oregano
  • 2 tablespoon fresh cilantro, chopped
  • salt and pepper to taste

Instructions

  1. Heat olive oil in a pan. Saute chicken pieces until almost done.
     
  2. Place chicken in slow cooker, along with cannelini beans, green chilis, onion, lime juice, tomatoes, garlic, cumin, and oregano.  Stir to mix. Cook on low for 6 hours.
     
  3. Serve with cilantro on top and salt and pepper to taste.
