Multi Pepper Chili

Multi-Pepper Chili uses 8 or more chilis and is sure to be a spicy chili recipe. Fresh spices and peppers will give it an aromatic warmth.

Notes

This chili goes well with separately cooked beans, pasta, rice or eggs. People have been known to add oyster crackers.

Ingredients

  • 3 pound lean, tough beef (or venison, etc.), cut in smallish pieces
  • 1/4 cup olive oil
  • 1 quart water
  • 2-4 bay leaves, fresh if possible
  • 8 peppers, or more
  • 1 tablespoon salt
  • 2 tablespoon unsweetened cocoa powder
  • 1 head garlic, peeled and finely chopped
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • 1 teaspoon freshly ground black pepper
  • 1 teaspoon cayenne pepper
  • 9 tablespoon corn meal

Instructions

  1. Sear the meat in the oil until grey.
     
  2. Add the water and bay leaves, and cook 1-1/2 to 2 hours.
     
  3. Remove the bay leaves, then add everything else except the corn meal and simmer 30 minutes.
     
  4. Stir the corn meal into some cold water to form a paste, then add it slowly to the pot with good mixing.
     
  5. Adjust the consistency with more water if desired.
