If you're like us, nothing cures the winter blues quite like a nice, steaming bowl of chili. What you put in your chili is up to you, but with this turkey chili recipe, you'll enjoy a great, lean, source of protein that will fill you up and make those cold days easier to get through.

This chili utilizes a blend of ground turkey, chicken broth, fire-roasted tomatoes, black beans, and corn. There is also a nice combination of spices to make this recipe something special.

Top your bowl with cheese and avocado, and you're ready to serve! If you like additional toppings, don't be shy, We served ours with crispy tortilla chips for dipping, which also bring a nice crunch to the dish.

Ingredients

  • 2 teaspoon olive oil
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 1 red bell pepper, diced
  • 1 pound ground turkey
  • 4 tablespoon chili powder
  • 2 teaspoon cumin
  • 1 teaspoon oregano
  • 1/4 teaspoon cayenne pepper
  • 1/2 teaspoon kosher salt
  • 1 (28-ounce) can fire-roasted diced tomatoes
  • 1 1/4 cup low- sodium chicken broth
  • 2 (15-ounce) cans black beans, drained and rinsed
  • 1 (15-ounce) can sweet corn, drained and rinsed
  • Tortilla chips
  • Grated cheese
  • Avocado
  • Sour Cream
  • Chopped green onions

Directions

  1. In a large sauce pot heat the oil over medium high heat. Add the onion, garlic and bell pepper and saute for 5-6 minutes. 

  2. Add the ground turkey breaking it up as it cooks until no longer pink.

  3. Stir and mix in the chili powder, oregano, cayenne and salt.

  4. Add in the tomatoes, broth, black beans and corn. Bring the mixture up to a boil then reduce to a simmer and cook for 30-45 minutes.

  5. Serve garnished with the tortilla chips, cheese, avocado, sour cream and chopped green onions.
