Crunchy Cashew Chili

You won't be able to get enough of this Crunchy Cashew Chili, it's one of the most unique easy chili recipes I've seen. Also makes a great vegetarian dish.

Ingredients

  • 2 onions, minced
  • 2 green peppers, chopped
  • 2 stalks celery, diced
  • 3 cloves garlic, minced
  • 1 bay leaf
  • 1 teaspoon each basil, oregano, ground cumin
  • 1 each salt, pepper
  • 2 tablespoon chili powder
  • 2 cup cooked kidney beans
  • 1/4 cup red wine vinegar
  • 1/2 cup cashews
  • 1/4 cup raisins
  • 1 can (28 ounces) diced tomatoes

Instructions

  1. Heat some olive oil in a large pot. Over a medium heat, saute the onions until clear.
     
  2. Then add the green peppers, celery and garlic and continue cooking for about 5 minutes.
     
  3. Then add the basil, oregano, cumin and chili powder and mix well with the vegetable mixture.
     
  4. Then add the can of tomatoes mixing well. Lastly, the kidney beans, vinegar, cashews, raisins, salt and pepper. Mix everything.
     
  5. Bring to the boil and then simmer with the lid on for about 1.5 hours. Make sure to check it periodically and give and good stir.
