Tortilla Crumb Chicken

With this fun and easy recipe, tortilla chips work as a tasty breading for pan-fried chicken. This is a great weeknight meal and you can adjust the number of chicken breasts depending on how many people you are feeding!

Ingredients

  • 1 cup tortilla chip crumbs or corn chip crumbs, crushed
  • 4 boneless, skinless chicken breast halves
  • 1 egg
  • Cooking oil
  • Salsa
  • Monterey jack cheese, shredded
  • Sour cream

Instructions

  1. Beat egg. Dip chicken in egg then in crumbs to coat.
     
  2. Pan fry in a small amount of oil until chicken is cooked through.
     
  3. Top with shredded cheese, salsa, and a dollop of sour cream.
