Sweet Tangy Filipino Chicken Adobo

"Simple but mind-blowing flavors – that’s what you can experience with this simple Filipino recipe. The longer you let it cook, the better it will be. This chicken recipe is the national dish of the Philippines and each region has its own versions. You can add your flavor notes by using honey instead of the typical sugar or adding some star anise to give a wonderful anise flavor. A teaspoon of chili flakes will also add a great kick to the dish. Adding a tablespoon of lemon juice will add some freshness and citrus flavor."

Ingredients

  • 17 ounce chicken drumsticks
  • 1 cup soy sauce
  • 1 cup vinegar
  • 1 tablespoon brown sugar
  • 4 clove Garlic
  • 1 tablespoon whole peppercorns
  • 2 bay leaves
  • 1 teaspoon tomato paste
  • 1 teaspoon olive oil
  • 2 cup water
  • Salt to taste

Instructions

  1. Marinate chicken in vinegar, soy sauce, brown sugar, minced garlic, peppercorns for at least 10 minutes.

  2. Add oil in a heated pan and stir in the tomato paste. Continue stirring for 1 minute.

  3. Add the Marinated chicken and the marinating liquid.

  4. Add the water, bay leaves.

  5. Bring to a boil and reduce to simmer.

  6. Simmer for about 20 minutes.

  7. Season with salt to taste.

  8. Serve.
