Sunday Best Chicken Stroganoff

Chicken stroganoff is one of our favorite dishes to eat on a lazy weekend. It's simple to prepare and full of great flavor. This recipe for Sunday Best Chicken Stroganoff is one of the easiest stroganoff recipes around and it requires only the most basic of ingredient. If you're looking for a dish that will satisfy the whole family, make this yummy chicken dinner this weekend and prepare to receive a lot of compliments!

Ingredients

  • 4 boneless, skinless chicken breasts
  • 3 tablespoon olive oil
  • 1 large onion, thinly sliced
  • 8 ounce mushrooms, sliced
  • 1 1/4 cup sour cream
  • salt and ground black pepper, to taste
  • 1 tablespoon chopped fresh parsley, to garnish

Instructions

  1. Divide the chicken breasts into two natural filets; place between two sheets of Saran wrap and flatten each to a thickness of 1/4 inch with a rolling pin.
     
  2. Cut into 1 inch strips diagonally across the fillets.
     
  3. Heat 2 tablespoons oil in a large frying pan and cook the sliced onion slowly until soft but not colored.
     
  4. Add the mushrooms and cook until golden brown. Remove and keep warm.
     
  5. Increase the heat, add the remaining oil and fry the chicken very quickly, in small batches, for 3 to 4 minutes until lightly colored. Remove and keep warm while frying the rest of the chicken.
     
  6. Return all the chicken, onions, and mushrooms to the pan and season with salt and pepper.
     
  7. Stir in the sour cream and bring to a boil.
     
  8. Sprinkle with fresh parsley and serve over egg noodles.
