Ingredients

  • 1 whole fryer chicken
  • garlic salt, to taste
  • pepper, to taste
  • 2 sprigs fresh tarragon
  • chicken stock, for cooking the rice
  • 3 cup cooked rice

Instructions

  1. Preheat oven to 350 degrees F.
     
  2. Rinse the chicken and lay in the pan breast-up. Sprinkle liberally with garlic salt and pepper, and put a sprig or two of tarragon into the cavity.
     
  3. Bake for 1.5 to 2 hours, depending on the size of the chicken. A good rule to follow is cook half an hour for every pound the chicken weighs.
     
  4. Cook the rice in the chicken stock.
     
  5. When the chicken is done, cut it into chunks and serve with the rice.
