Peach stuffed Chicken Breasts

Ingredients

  • 6 whole chicken breasts, boned and skinned
  • 1 teaspoon salt
  • 1/8 teaspoon ground pepper
  • 1/2 cup butter or margarine
  • 3 fresh ripe peaches, peeled and diced
  • 1/2 cup chopped onion
  • 1/2 cup chopped cashews
  • 1/8 teaspoon ground ginger

Instructions

Place each chicken breast on a piece of wax paper. Flatten to 1/4-inch thickness with a meat mallet or rolling pin. Sprinkle insides of breasts with salt and pepper. Set aside. Combine peaches, onion, cashews and ginger, stirring well. Place 1/4 cup filling on each breast. Fold sides over filling and secure with a toothpick. Melt butter in a 9x13-inch baking pan and place breasts top side down in butter. Bake at 375 degrees for 25 minutes, turn chicken and bake an additional 20 minutes. Serve with Peach Sauce. PEACH SAUCE 1/2 cup white sugar 2 tablespoons cornstarch 1/2 teaspoon nutmeg 2 tablespoons lemon juice 1-1/2 cups water 1/2 cup chopped, fresh peaches Combine sugar and cornstarch in saucepan. Add nutmeg, lemon juice and water. Heat, stirring until thickened. Stir in peaches and heat through. Serve with Peach-stuffed Chicken Breasts.
