Not Your Average Oven Fried Chicken

You may have prepared oven fried chicken recipes before, but none have tasted as good as this version. Seasoned with parsley, Parmesan, thyme, garlic and more, this recipe for Not Your Average Oven Fried Chicken is simply unforgettable. When you want to make a slightly healthier version of fried chicken for your family or dinner guests, a great way to do so is to fry the chicken quickly in a skillet for a few minutes and then cook it the rest of the way in the oven. You get the same great flavor as regular fried chicken recipes but less of the grease and fat!

Ingredients

  • 3 pound chicken, cut into pieces and skinned
  • 1/2 cup plain low-fat yogurt
  • 3 clove garlic, minced
  • 1 teaspoon thyme
  • 1 teaspoon marjoram
  • 2 cup bread crumbs (about four slices of bread, use whole wheat if possible)
  • 1/4 cup minced parsley
  • 3 tablespoon grated Parmesan cheese
  • 1 tablespoon unsalted margarine

Instructions

  1. Preheat oven to 375 degrees F.
     
  2. Pat the chicken pieces dry.
     
  3. In a bowl, combine the yogurt, garlic, thyme and marjoram.
     
  4. If starting with bread slices, tear the bread into pieces and crumb in a blender. In a flat pan, combine the bread crumbs with the parsley and Parmesan.
     
  5. Dip each piece of chicken into the yogurt mixture, coating it fully, then roll in bread mix. Place each piece on a rack.
     
  6. When all pieces are coated, let stand uncovered for 20 minutes in the refrigerator; this helps the breading stay on the chicken.
     
  7. In a nonstick skillet, melt the margarine over moderate heat until bubbly. Cook the chicken pieces about 5 minutes per side until just browned.
     
  8. Transfer each piece of chicken to a baking pan as it is browned, arranging them all in one layer.
     
  9. Bake uncovered for 30 minutes or until the chicken is done.
