We have made a variation of the curry recipe, refreshed with lime juices and as it came out as one of the favorite, we are brining you this Lime Chicken Curry recipe. The recipe is easy to make, does take maximum of 1 hour even if you lack experience !"

Ingredients

  • 1 (1-pound) Chicken
  • 2 tbsp of Green Curry Paste
  • 1 cup of Chinese Cabbage
  • 1 cup of Carrots
  • 2 Garlic Cloves
  • 1 cup of Broccoli
  • 1 cup of diced Red Onion
  • 1 tbsp of grated Ginger
  • 2 Juice of two Limes
  1. Start by heating the coconut oil in a large pot and fry the chicken seasoned with salt and pepper. Reserve

  2. In the same pot, add the onion, garlic and ginger and let cook for 2-3 minutes

  3. Now, add the green curry paste and cook for another 3 minutes

  4. Add the remaining vegetables and cook it for 5 minutes in medium heat

  5. Add the coconut milk, coconut sugar, soy sauce, water, lime juice, salt and pepper and cook for 20-25 minutes in low heat

  6. Serve with Basmati rice and garnish with chopped coriander
