Light Chicken Pot Pie is a fast and healthy meal that's great for any night of the week. The perfect meal to make when there is leftover chicken in the refrigerator, these chicken pot pies include vegetables and are covered in a cauliflower crust. The individual pot pies are made healthier by using ingredients that are not as heavy and fattening as traditional pot pie ingredients. Heavy cream is replaced with a mixture of milk and tapioca flour for the base. Added to this is a handful of blended nuts, which makes the filling extra rich and creamy.
