Chicken in Mango Simmer

Ingredients

  • 1 pound prepared chicken breast
  • 2 ripe mango, pitted, peeled and cubed
  • 3 spring onion stalks, sliced
  • 1 large tomato, seeded and rough chopped
  • 3 thin slices fresh gingerroot, mashed and chopped (optional)
  • juice of one lime
  • 1 teaspoon black pepper
  • 1/2 teaspoon Kosher salt
  • 1 cup chicken broth

Instructions

In fricassee pan place all ingredients except chicken broth and chicken meat. On high heat, stir until cooking begins and juices start extracting. Spread ingredients to allow placing of chicken on pan bottom and add broth. Bring back up to a light boil and cover. Reduce heat to maintain a low simmer and cook for 20 minutes or until chicken is done, add more broth periodically if needed to prevent burning. Remove lid and simmer until liquid turns syrup.
