Chicken Satay Skewers with Peanut Sauce

Ingredients

  • For Peanut Dipping Sauce
  • 1/2 cup peanut butter
  • 1/4 cup coconut milk
  • 1 lime, juiced and zested
  • 2 tablespoon soy sauce
  • 2 tablespoon Sriracha (use more or less depending on taste)
  • 1 teaspoon brown sugar
  • For Chicken Skewers
  • 1 3/4 cup coconut milk
  • 2 tablespoon brown sugar
  • 1 tablespoon curry powder
  • 1 teaspoon cayenne pepper
  • 1/2 lime, juiced and zested
  • 2 tablespoon soy sauce
  • 1 pound boneless, skinless chicken breasts, cut into 1-inch strips

Instructions

  1. In a dish, soak wood skewers for at least 2 hours.

  2. To make peanut sauce, combine all ingredients in a bowl and whisk well to combine.  Add water to thin sauce to desired consistency. Set aside.

  3. Prepare the chicken as follows:  In a large dish, combine coconut milk brown sugar, curry powder, cayenne, lime juice, lime zest and soy sauce.  Whisk to combine well. Add chicken, turning to completely cover. Cover with plastic wrap and marinate for at least one hour.  Stir the meat occasionally.

  4. Meanwhile, preheat the broiler to HIGH and prepare a baking sheet with aluminum foil and baking rack.  Lightly spray rack with cooking spray.

  5. Drain chicken from the marinade and thread onto skewers.

  6. Place chicken skewers on baking rack with 1 inch between each.  Broil for 2-3 minutes, turn skewers, broil for an additional 2 minutes.  Turn again if necessary.

  7. Serve immediately with peanut sauce.
