Chicken Cacciatore

Ingredients

  • 8 chicken pieces
  • 1/4 cup olive or vegetable oil
  • 1 large onion, chopped
  • 1 green pepper chopped
  • 2-3 garlic cloves minced or more
  • fresh mushrooms sliced thick (optional)
  • 1 small can tomato paste
  • 2 cup hot water
  • 1/4 cup dry red wine
  • 1 bay leaf
  • 1/4 teaspoon allspice
  • salt and pepper

Instructions

Remove the skin and fat from the chicken then sprinkle with salt and pepper. Brown the chicken on all sides in the oil. Remove chicken from pan and add the onions, green peppers, mushrooms and garlic. Stir fry for a few minutes until the vegetables begin to wilt. In a bowl combine tomato paste and remaining ingredients and mix well. Place the chicken and sauteed vegetables in an oven proof baking dish- pour the tomato paste mixture over the chicken. Bake covered at 350: for about 45 minutes then uncover and bake another 20 minutes or so until the sauce thickens a little. Serve over pasta (any kind). Serves about 4
