"Today’s feature is Adobong Paa ng Manok. It is also called adobong adidas, from the famous shoes factory. (I believe it is an infamous Filipino pun.) Adobong paa ng manok has always been a special delicacy to Filipinos. However, those who are foreign to this dish might need an adjustment from chicken feet appearance down to its taste. But for those who are adidas lovers, turning it into adobo is absolutely a go. "

Notes=You can get chicken feet already cleaned from the wet market. It will save you more time. If they are not clean yet, you have to cut the claws first, boil it in water and remove the scales properly before proceeding to cook. You need to remove the brownish stuff left in the "palm" of the chicken feet to get adidas thoroughly cleaned.
-If you don't prefer adobong adidas spicy, you can still follow through this recipe and remove the chili. You can also add a bit of brown sugar to balance out the flavors.

Ingredients

  • 500 gram chicken feet
  • 2 (2-ounce) soy sauce
  • 1 cup vinegar
  • water
  • 4 clove garlic
  • 1 pc onion, medium size, chopped
  • 2 pcs bay leaf
  • 1 tablespoon cooking oil
  • peppercorn
  • salt
  1. Put in chicken feet, 1/2 cup water, soy sauce, vinegar, half of the onions, bayleaf, and garlic in a pot. Bring to a boil over medium heat until the sauce is reduced.

  2. When the sauce is reduced, add in more water and let it simmer for 30 minutes until the chicken feet are tender. Keep adding water as needed. When the chicken feet are tender, remove from the heat and separate chicken feet from the sauce.

  3. In a pan, heat oil and saute the remaining garlic and onion until golden brown.

  4. Add in the chicken feet and stir occasionally until very tender. The skin should be peeling off at this stage.

  5. Put the prepared sauce and let it simmer for 3-4 minutes. Adjust your seasonings as needed.

  6. Add the chili peppers and let the mixture boil for 1 more minute.
