Ingredients

  • 2 cup mayonnaise
  • 1/4 cup lemon juice
  • 5 cup cubed, cooked chicken
  • 1 cup celery, sliced
  • 1 cup cooked rice
  • 1 cup slivered almonds, toasted
  • 1/4 cup onion, minced
  • 1 (2-ounce) jar diced pimientos, drained
  • 1 cup shredded Cheddar cheese
  • 1 1/2 cup crushed potato chips

Instructions

  1. Preheat oven to 325 degrees F.
     
  2. In a large bowl, mix mayonnaise and lemon juice until smooth.
     
  3. Add chicken, celery, rice, almonds, onion and pimientos; mix well.
     
  4. Spoon mixture into a greased 13x9x2 inch baking dish. Sprinkle with cheese and crushed potato chips.
     
  5. Bake, uncovered, for 30-35 minutes or until bubbly.
