Taco Night Rice Bake

Mexican casserole recipes can take your Taco Night to the next level of deliciousness. Taco Night Rice Bake is made with flavorful Mexican sausage, also known as chorizo, to give it a spicy flavor that the family will love. Mixed with sour cream and a blend of Monterey Jack and Cheddar cheese, it's creamy flavor will become a household favorite. Toss it in the oven and you'll have yourself a Mexican dish that will make your dinner a fiesta.

Ingredients

  • 2 Chorizo Sausages, uncased and cooked
  • 4 cup prepared rice
  • 1/2 cup diced red onion
  • 1 teaspoon minced garlic
  • 1 large carrot, diced
  • 2 teaspoon oil
  • 1 cup cheddar cheese, grated
  • 1/2 cup jack cheese for topping
  • 1 cup sour cream
  • 1 cup chicken broth
  • Salt and pepper

Instructions

  1. Preheat oven to 350 degrees F.

  2. In a saute pan, heat oil and add onion, carrots and minced garlic. Saute for 5 minutes.

  3. In a large bowl combined cooked sausage, rice, cheese, sour cream, chicken broth, salt and pepper and sautéed vegetables.

  4. Mix well and add to a 9X13 baking dish.

  5. Bake for 20 minutes or until casserole is bubbly at edges.
