Ingredients

  • 6 Medium Yellow Squash
  • 1 Med-large yellow onion
  • 1 cup Water
  • 2 cup Sharp Cheddar Cheese
  • 1 cup Sour Cream
  • 2 large Eggs
  • 1 teaspoon Sea Salt
  • 1 tablespoon Fresh Thyme
  • 1 tablespoon Ground Black Pepper
  • 1 cup Parmesan Cheese
  1. Preheat the oven to 400F and lightly grease a 9×9 square glass baking dish.

  2. Cook the squash and onion in a large pan with 1/3 cup water on medium-high heat for about 8-10 minutes or until soft. Strain any excess water before placing them in a large mixing bowl.
