Ingredients

  • 1 pound ground beef
  • 1/2 cup chopped onion
  • 2 clove garlic, minced
  • 1 tablespoon taco seasoning
  • 1 teaspoon cumin
  • 1 cup black beans, drained and rinsed
  • 1 cup frozen corn
  • 1 (14-ounce) can fire-roasted tomatoes
  • 1/2 cup jarred salsa
  • 2 cup shredded Mexican blend cheese, divided
  • 1 cup long grain rice, uncooked
  • 2 cup chicken broth
  • 2 tablespoon chopped cilantro
  • Sour cream
  • Lime wedges
  • Hot sauce

Instructions

  1. Heat oven to 375 F. Grease a 9x13 inch baking dish with cooking spray.
     

  2. In a large skillet over medium-high heat add the ground beef and onions and cook until the beef is browned and no longer pink, breaking up the beef as it cooks.
     

  3. Add the minced garlic and cook for another minute.
     

  4. Stir in the taco seasoning and cumin into the beef mixture.

  5. Add the black beans, corn, roasted tomatoes, salsa and half of the cheese and stir into the beef mixture.
     

  6. Stir in the rice and broth and mix well.
     

  7. Spoon into the baking dish and top with half of the remaining cheese. Bake for 45 minutes or until the rice is cooked.
     

  8. Top with the remaining cheese and bake for another 5 minutes until the cheese melts.

  9. Top with chopped cilantro and serve with sour cream, limes, and hot sauce.
