Oh So Easy Stew

After a hard days work you deserve a delicious, easy casserole. Oh So Easy Stew is a hearty meal made with beef, carrots and mushrooms. Served with egg noodles, this heavenly dish will surely make it into your weekly dinner line up.

Ingredients

  • 2 pound boneless beef chuck or round steak, cut into 1 -inch cubes
  • 1/4 cup all-purpose flour
  • 1 1/3 cup sliced carrots
  • 1 can (14-ounces) whole peeled tomatoes, undrained and chopped
  • 1 package of dry onion soup mix
  • 1/2 cup dry red wine or water
  • 1 cup fresh or canned sliced mushrooms
  • 8 medium or broad egg noodles, cooked and drained

Instructions

  1. Preheat oven to 400 degrees F.
     
  2. In 2-quart casserole, toss beef with flour, then bake uncovered 20 minutes.
     
  3. Add carrots, tomatoes, then beefy onion soup mix blended with wine.
     
  4. Bake covered 1 1/2 hours or until beef is tender. Stir in mushrooms and bake covered an additional 10 minutes.
     
  5. Serve over hot cooked noodles.
