Ingredients

  • 2 pound chicken breasts
  • 9 ounce Provolone cheese
  • 1 cup sour cream
  • 8 ounce canned diced green chilies
  • 2 ounce red bell pepper
  • 3 ounce red bell pepper
  • 3 ounce whole corn kernels
  • 2 ounce cherry tomatoes
  • 1 teaspoon Salt
  • 1 teaspoon ground black pepper
  • 2 tablespoon butter
  • 2 tablespoon vegetable oil

Instructions

  1. Preheat oven to 400 degrees Fahrenheit.

  2. Prepare a 9x13 casserole dish and brush some butter.

  3. Cut chicken breasts into bite-size pieces, season with salt and pepper.

  4. Heat oil in a large skillet and add the chicken. Cook for 3 minutes until cooked through.

  5. Arrange sautéed chicken in a casserole dish.

  6. In a separate bowl, mix cheese, sour cream, and canned diced green chilies (with juice).

  7. Add chopped red bell pepper and corn to the casserole dish.

  8. Add the cheese mixture.

  9. Baked in the oven for 15 minutes.

  10. Serve with diced tomatoes.
