Ham and Cheese Bake

Ingredients

  • 1 1/2 cup cooked ham, diced
  • 1 1/2 cup frozen or canned mixed vegetables
  • 1/2 cup Parmesan cheese
  • 1 cup baking mix, like Bisquick
  • 1 cup milk
  • 2 eggs
  • 1 cup Cheddar cheese, shredded

Instructions

  1. Preheat oven to 400 degrees F.
     
  2. Grease a 9-inch pie plate.
     
  3. Mix ham, vegetables and Parmesan cheese. In a separate bowl, stir together baking mix, milk and eggs until blended. Fold in the ham mixture and pour into pie plate.
     
  4. Bake 25 minutes or until knife inserted in center comes out clean. Sprinkle with cheddar cheese and bake 5 minutes longer or until cheese is melted.
