Garden Vegetable Casserole

Easy casserole dishes are a great way to add some "oomph" to your boring old sides. This Garden Vegetable Casserole combines a variety of fresh veggies in a succulent wine-infused broth for a mouth-watering side dish that will really impress your guests!

Ingredients

  • 1 cup vegetable broth
  • 1 teaspoon garlic cloves, minced
  • pepper, to taste
  • 1 teaspoon Italian seasoning
  • 2 onions, sliced
  • 1 green pepper, sliced
  • 1 turnip, sliced
  • 4 celery ribs, sliced
  • 6 medium carrots, sliced
  • 1/3 cup dry white wine or sparkling apple juice

Instructions

  1. Pre-heat oven to 350 degrees F.
     
  2. In non-stick medium saucepan over high heat, combine broth, garlic, pepper, and Italian seasoning. Simmer for 1 minute.
     
  3. Pour broth mixture into large non-stick baking dish. Add remaining ingredients and mix well.
     
  4. Cover casserole and bake for 45 minutes or until vegetables are tender. Serve hot.
