Cornbread and Beef Casserole

Nothing says comfort food like a cozy casserole recipe. This great recipe is topped with a golden brown corn bread to soak up every bit of stew. Don't waste a bite and make Cornbread and Beef Casserole tonight.

Ingredients

  • 1 cup cornmeal
  • 1 can (15-ounces) creamed corn
  • 1 cup milk
  • 2 large eggs, lightly beaten
  • 1/4 vegetable oil
  • 2 teaspoon salt
  • 2 teaspoon baking soda
  • 1 pound ground beef, cooked, drained and crumbled
  • 1 can (7-ounces) Ortega diced green chiles
  • 2 cup Cheddar cheese, shredded and divided
  • 2/3 cup onion, chopped

Instructions

  1. Preheat oven to 350 degrees F. Lightly grease 10- to 11-inch ovenproof skillet.
     
  2. Combine creamed corn, milk, eggs and oil in large bowl. Add corn meal, baking soda and salt; stir until combined.
     
  3. Pour half the corn meal mixture into skillet; top with beef, chiles, 1 1/2 cups cheese and onion. Pour remaining batter over top, spreading to cover filling. Top with remaining cheese.
     
  4. Bake for 50 minutes or until set; let stand for 5 minutes before serving.
