Ingredients

  • 8 ounce bacon, chopped
  • 1 pound spaghetti
  • 1 cup chopped onion
  • 1 red bell pepper, chopped
  • 1 (14-1/2-ounce) can diced tomatoes, drained
  • 2 cup chicken broth
  • 2 (10-3/4-ounce) cans condensed cheese soup
  • salt and fresh ground pepper to taste

Instructions

  1. Preheat oven to 350 degrees F.

  2. Bring a large pot of water to a boil, add 1 Tablespoon salt and cook spaghetti until al dente, about 7 minutes or as package directs. Drain.

  3. Meanwhile, in a large skillet saut the bacon over medium heat until it is just beginning to crisp. Remove bacon with a slotted spoon and set aside. Pour out accumulated bacon fat, leaving about 1 tablespoon in the pan.

  4. Add onion and bell pepper into the skillet, return to medium high and cook, stirring frequently, until vegetables are tender, about 3 minutes. Stir in tomatoes, broth and soup, stirring until well combined. Add spaghetti and the reserved bacon, and season with salt and pepper to taste.

  5. If the pan you used is ovenproof you can simply smooth the mixture and place it directly into the oven. If not, pour mixture into a greased 9 x 13-inch baking dish. Bake for about 40 minutes.
