Ingredients

  • 4 cup yams
  • 1/4 cup melted butter
  • 1/2 cup brown sugar
  • 1 1/2 cup miniature marshmallows

Instructions

  1. Preheat oven to 400 degrees F.

  2. Cut yams into large chunks. Place yams in pot & cover with water.

  3. Bring to a boil, then gently simmer for about 15 minutes, or until yams are fork tender. Drain water & let cool until cool enough to handle.

  4. Peel the skin from the yams. (It should just slide right off!) In same pot, add the melted butter & brown sugar.

  5. Mash yams with potato masher, incorporating the butter & brown sugar. Place yams in prepared casserole dish.

  6. Bake, covered, for 25 minutes. Uncover and spread on the marshmallows.

  7. Bake, uncovered, for another 3 – 5 minutes, until marshmallows are beginning to melt and get lightly brown.
