Ingredients

  • 4 pound yukon gold potatoes, diced (no need to peel)
  • 4 cup grated Cheddar cheese
  • 24 ounce sour cream
  • salt and pepper
  • 1 box french fried onions

Instructions

  1. Preheat oven to 325 degrees F.

  2. Boil potatoes in a large pot of salted water until fork tender.

  3. Allow potatoes to cool in large bowl. Stir in sour cream, salt, pepper, and cheese.

  4. Pour mixture out into a greased 9x13-inch baking dish, spread evenly. Top with fried onions.

  5. Bake, uncovered, for about 30 minutes, until bubbly and top is golden brown.
