Basic Jerk Sauce

Ingredients

  • 5 bunches whole scallions, finely chopped
  • 3 large cloves garlic, minced
  • 3 Scotch bonnet peppers (any color), seeded and minced
  • 2 large sprigs of fresh thyme or 2 Tablespoons dried
  • 1/4 cup ground allspice (dry pimento berries)
  • 2 tablespoon freshly ground black pepper
  • 1 1/2 tablespoon slat
  • 1 cup water

Instructions

In a large bowl, combine all ingredients except the water. Mix well and add water to form a loose paste.
